Noma, which is an abbreviation of the Danish for ‘Nordic food’, is run by head chef and partner René Redzepi. Noma was established in 2003 and has gone from strength to strength in terms of Michelin stars and world rankings. Redzepi actively promotes Nordic food and ingredients, including as one of the ambassadors for the Nordic Council of Ministers’ successful programme New Nordic Food.
The purpose of New Nordic Food is to promote Nordic food culture and gastronomy associated with culture, tourism and business. A new programme for New Nordic Food has been drawn up for the period 2010-1014.
